PRIMARY FUNCTION: Food and Beverage
INSPIRATION: Inspired by light aircraft flying experience and got the best bird eye view of mountain forest and giant powerful waterfall crashing down. Combining exquisite brand ROOT with this unforgettable and exciting experience. Taste from raw concept is being applied and integrated into restaurant interior design with seasonal ingredients that will delight most selective buds.
UNIQUE PROPERTIES / PROJECT DESCRIPTION: A new creative and French fine dining restaurant located in one stylish building. Farm to table is the core value of ROOT and sourcing best locally grown seasonal ingredients from local organic farms in Hong Kong that aims to serve exquisite French cuisine.
OPERATION / FLOW / INTERACTION: Sunlight is streaming through the wooden screens which are being put beside the lift lobby curtain wall. When walking through the long corridor and come with nice smell from open kitchen as performance stage at the end of the corridor. Diners could enjoy watching the chef preparing which makes an empathetic connection between diners and chef and highlights the perfect combination of color and aroma also taste.
PROJECT DURATION AND LOCATION: The project started in September 2018 in Hong Kong and finished in December 2018.

PRODUCTION / REALIZATION TECHNOLOGY: Selected fine wood and raw stone to make sophisticated modern interior design details like wooden screens made up of divergent sizes to imitate a real forest.Wooden screens are movable to create zones and matching different needs.We deliberately put wooden screens on the curtain wall to avoid the sense of pressure generated by tall buildings and block sunlight and create a refreshing dining atmosphere. Reducing noise and enhance the visual permeability in dining area, main air conditioners are installed in the kitchen also behind an antique bronze mirror hanging cabinets.

RESEARCH ABSTRACT: Journal study. Research Objective is to examine how to source materials from basic and create a classy space, in order to provide diners a heart warming experience with excellent services.
CHALLENGE: Making the best use of limited area. Carefully calculated the best distance of air conditioning and aeration equipment installation because cold air might quickly chill the food while frying and cooking fumes will badly dining experience as well.
