DESIGN NAME: Cubicious
PRIMARY FUNCTION: Mobile kitchen unit
INSPIRATION: The idea of "Cubicious" came from the satisfying different needs of different catering organisations. Thus, it has a modular structure that can be organized according to different needs. Also, different from other mobile cooking stations in the market, it focuses not only chef's needs but also customers' as a significant point of show cooking. Nowadays, people want to be reassured about what is served on their plates, and the Cubicious satisfy that thanks to enabling live cooking.
UNIQUE PROPERTIES / PROJECT DESCRIPTION: CUBICIOUS is a mobile cooking unit that can be adapted for different catering organisations according to different service sizes. Thanks to modular structure, it can satisfy different needs that are result of various organisations in terms of numer of customers and service size.. Also, modular structure enables to use unit as needed according to organisations, and joint surfaces enables to combine units in different ways according to different needs. Thus, food lines can be decreased by organising type and number of kitchen units according to size of catering organisation. Moreover, modularity is an important advantage for mobility.
OPERATION / FLOW / INTERACTION: Cubicious is separated three main units which are cooking, preparation and service units according to three main processes of cooking, and each unit was designed for needs of each operation in terms of size and positions of storage areas and refrigerated drawers. The aim of this separation is that adapting Cubicious to different tasks and organization easily to satisfy different needs, and to offer chance to flexible use while increasing mobility of unit. Thus, people can organize number of units and cooking line according to number of customers and service size to solve long food lines problem.
PROJECT DURATION AND LOCATION: The project began in November 2015, and was completed in May 2016 in Ankara, Turkey. Also, the prototype was produced in İstanbul, Turkey.

PRODUCTION / REALIZATION TECHNOLOGY: In production process, stainless steel is preffered for case of units in terms of durability, and for worktop, corian is preferred in terms of durability and smooth surface. Also, corian can be customized by coloring.

RESEARCH ABSTRACT: Mobile cooking units have two user groups. Both chef and customers have different interaction with cooking unit. Beside this, mobile cooking units have different requirements according to task and place. Thus, I had to do a versatile research. First, I have talked with some famous chefs and observed their cooking operations and needs. Then, I have talked with customers to understand their expectation from live cooking. Last, I have observed hotels, restaurants and gardens that can be home to some catering organisations to understand tasks and atmosphere to create a compatible product. As a result of research, mobile kitchen units on the market are fully function based as a requirement of Industrial kitchen market, but they ignore customers needs and interactions with live cooking.
CHALLENGE: The main challenge was that it was hard to creating modular kitchen system for industrial kitchen sector and creating suitable workspace for chefs with mobile kitchen units. After idea of the Cubicious was developed, it was hard to adjust kitchen units to meet ergonomic reqirements and standards of industrial kitchens in terms of durability, size of containers and worktop. Last, there were some problems in prototyping process.
